Mini Pie Filling Cheese Tarts

Ingredients:
-
2 - 8oz. Packages of Low-fat Cream Cheese (room temperature)

3/4 C of Sugar or Substitute
-
3 eggs
-
1 tsp vanilla extract
-
1 Tbsp. lemon juice (fresh lemon)
-
Dash of lemon zest
-
Gluten-free Vanilla Wafers or Nilla Wafers
-
1 Can of (your favorite) Pie Filling (we like cherry)

Directions:

Mix together cream cheese, sugar, eggs, vanilla, lemon juice, and lemon zest until smooth.

Line baking cups with vanilla wafers face-up inside each cup.

Scoop filling over top of each wafer (3/4 full)
-
Bake at 350 degrees for about 20 minutes
-
Cool and top with pie filling of your choice. Chill again and serve. Makes a great holiday treat for parties.
Meringue Cookies

Okay... Okay... so these are not healthy for you but oh so yummy for the Holidays!! Easy make and serve to friends and family, or a great gift idea. Enjoy!!
Ingredients:

2 Lg Egg Whites
-
1/3 C of Granulated Sugar
-
1/4 Pinch of Salt
-
Optional Ingredients: 3 TBSP Chocolate Chips, or Peanut Butter Chips, or Cherry Juice from Mar chino Cherries Jar... Or Extract flavorings (Peppermint, Lemon, Etc.).

Directions:

Preheat Oven at 375 Degrees
-
Mix egg whites, sugar and salt together until the batter creates peaks. Add vanilla extract and optional ingredient and fold into batter until well combined.

With two TBSPs form batter on to lined cookie sheet or use decorating tubes to make cookies and turn off oven and place cookies in oven. Leave in oven over night for cookies to set.

Serve and store in air tight container.
Chocolate Chip Muffins

Ingredients:

1/3 C Sugar

1 Egg
-
2 Cups of Bisquick
-
2 TBSP oil
-
2/3 Cups Milk
-
3/4 C Chocolate Chips

Directions:

Mix Bisquick and Sugar, set aside
-
Mix egg, milk, and oil. Add Dry ingredients into the moist mixture and stir until moist.

Fold in the Chocolate Chips
-
Divide into muffins tin or liners, Bake 15 to 18 minutes.

Cool and Serve.
Bisquick Banana Muffins

Ingredients:

2 Cups of Bisquick
-
1 egg, lightly beaten
-
1 1/3 Cups Bananas, Mashed (About 3 Bananas)

1/2 Cup of Brown Sugar, Packed
-
3 TBSP Milk
-
2 TBSP Oil
-
1 tsp Vanilla Extract
-
1/2 Cup Chocolate Chips (Optional)

Directions:

Preheat Oven 400 degrees
-
Mix Dry ingredients together in a Lg Bowl, in a separate bowl mash banana, egg, milk, and oil. Slowly incorporate Dry Mixture into moist mixture.

Divide into muffin cups or liners and bake 15 to 18 minutes
-
Cool and serve.
